How to cook biryani?

Chicken Biryani recipe with simple, easy-to-follow instructions

Ingredients:

  • 1 cup basmati rice
  • 2 tablespoons oil
  • 1 cinnamon stick
  • 2 cardamom pods
  • 2 cloves
  • 2 onions, chopped
  • 2 tomatoes, chopped
  • 1 teaspoon ginger garlic paste
  • 1 teaspoon turmeric
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt, to taste
  • 1 cup chicken or lamb, cubed
  • 1 cup vegetables (optional)
  • 1 cup yogurt
  • 1/2 cup cilantro, chopped
  • 1/2 cup mint leaves, chopped
  • 2 cups chicken or beef broth
  • 1 lemon, juiced
  • Saffron strands (optional)

Instructions:

  1. Rinse the basmati rice until the water runs clear and set it aside to soak for at least 20 minutes.
  2. In a large pan, heat the oil and add the cinnamon, cardamom, and cloves. Fry for a minute.
  3. Add the chopped onions and fry until they are golden brown.
  4. Add the ginger garlic paste, chopped tomatoes, turmeric, red chili powder, cumin, coriander, garam masala, and salt. Fry for 5-7 minutes.
  5. Add the chicken or lamb and vegetables, if using, and fry for 10-12 minutes or until the meat is cooked through.
  6. Add the yogurt, cilantro, and mint leaves, and stir well.
  7. Drain the rice and add it to the pan. Pour in the chicken or beef broth, lemon juice, and saffron strands, if using.
  8. Stir everything together and cover the pan.
  9. Cook on low heat for 20-25 minutes or until the rice is fully cooked and the liquid has been absorbed.
  10. Serve the biryani hot with raita and/or chutney.
